Sunday Morning Chocolate Chip Banana Pancakes


These pancakes have become a Sunday ritual in our house. They are SO good! I love how they are made with equal parts flour and equal parts ground almonds. So they feel more substantial, and much healthier than standard pancakes. And they are Zac's absolute favourite too!
Here's the recipe....
Chocolate Chip Banana Pancakes
(Recipe adapted from A Kinfolk Table)

1 large egg
1 overripe banana, mashed
1/2 cup  milk
2 tbsp fresh lemon juice
1 tbsp unsalted butter, melted
1 tsp vanilla extract
1/2 cup flour (all purpose or whole wheat pastry flour)
1/2 cup almond meal
1 1/2 tbsp sugar (brown or white sugar)
1 tbsp flax meal or wheat germ
1 tsp baking powder
1 tsp ground cinnamon
1/4 cup semi-sweet chocolate chips

Whisk the egg in a medium bowl, then whisk in the mashed banana, milk, lemon juice, melted butter and vanilla. Mix until well combined.

In another bowl, whisk the flour, almond meal, sugar, flax meal, baking powder and cinnamon. Stir the banana mixture into the flour mixture until just combined. Allow the batter to sit at room temperature for a few minutes, then stir in the chocolate chips.

Heat a large pan over medium-low heat. Brush the pan with butter and pour about 1/4 cup of the batter onto it for each pancake. Cook for 3-4 minutes or until the edges are set and the surface is bubbly. Flip the pancakes with a spatula and cook for another two minutes. Transfer to a plate and repeat with additional butter and remaining batter.

Enjoy with real maple syrup :)
... Or eat them as is, torn into bite-sized pieces, and smeared all over your face. Like Zac.
