Nine months of no wine or cocktails can be a bit boring, so I was excited to try this recipe for homemade ginger ale that I saw in a Bon Appétit magazine.
Turns out it's super easy, and it's delicious!
Combine 1/2 cup honey, 1/2 cup sliced peeled fresh ginger and 1/2 cup water in a small saucepan. Bring to a simmer over medium heat, stirring occasionally for about 15 minutes. Remove from heat and allow to cool. Strain syrup into a pitcher, add 4 cups club soda, some fresh mint and ice, and serve.
