Homemade Plump Perogies


In my opinion, perogies are the ultimate comfort food.
And homemade, fresh perogies are simply out of this world!
Sure it takes more work than boiling a bag of those frozen store bought ones, but the payoff is colossal.

Believe me, make these babies one day when you feel like spoiling yourself, and you're in for a real  treat : )

Homemade Plump Perogies

Ingredients:
2 Tbsp butter
1 onion, sliced
sour cream to serve with perogies

Dough
3 cups all purpose flour
1 1/2 tsp salt
1 egg
3/4 cup water
4 tsp vegetable oil

Filling:
1 Tbsp butter
1/3 cup finely chopped onion
1 cup mashed potatoes
3/4 cup shredded cheddar cheese
1/2 tsp salt
1/4 tsp pepper

To make the dough: 
combine flour & salt. Beat together egg, water & oil, then add to flour. Mix until the dough comes together in a ball. If the dough is too sticky, add more flour, if it's too dry add a little more water.
Turn dough out onto a lightly floured surface and knead a few times, until just smooth. Cut the dough in half, and wrap each in plastic wrap. Leave aside for 30 minutes.

For the filling:
In a frying pan, heat butter over medium heat and cook onion until soft. Transfer to a bowl and mix  with mashed potatoes, cheese, salt & pepper.

Roll out one half of the dough on a floured surface to 1/16th of an inch (1.5mm) thickness. Use a 3 inch round cutter to cut dough into circles.

Place a generous tsp of filling inside a dough round, moisten the edge of one half of the round with water, fold in half and press/crimp edges to seal them shut. Place on a tray and cover with a damp towel.
Repeat with remaining dough rounds, and other half of dough. 
(do not pile uncooked perogies on top of each other or they may stick together irreversibly!)

Prepare a large pot of boiling salted water. Cook perogies in batches (to avoid them sticking together) until they float to the top... about 2 minutes. Drain in a colander.

In a large frying pan, saute onion in butter until browned. Add a batch of perogies and cook on each side to brown/crisp up slightly.
Serve warm with sour cream : )

These look awesome! I've been on a quest to find homemade "fast food" recipes. In other words: food to make that freezes and defrosts well, without too much hassle. I think this might be a winner. This looks absolutely delicious!
