These little panna cotta cups are simply delightful!
They make for a perfect dessert on a warm summer evening.
My husband just adores them. He can never eat just one.
And they are ridiculously simple to make!
Read on for the recipe....
Vanilla Panna Cotta
1/4 cup water
3 1/2 tsp gelatine powder
3 1/4 cups cream (original recipe calls for 20-30%, but I used 10% cream)
3/4 cup icing sugar
1 tsp vanilla extract
fresh berries and icing sugar for dusting
Mix water & gelatine in a bowl and set aside for a few minutes.
In a saucepan heat the cream, sugar and vanilla over medium heat for around 5 minutes. Then add in the gelatine mixture and whisk for another 2 minutes. Remove from heat and divide into small serving cups or ramekins, and place in the fridge to set, for approximately 4 hours.
When ready to serve, top with fresh berries and sprinkle with icing sugar. Enjoy!!
Makes about 12 cups.

It looks like the perfect summer dessert (if only summer would arrive here in California though).... Adding the berries is a perfect touch.
