Last night I was making a batch of macarons for a work party, but I knew they wouldn't be safe left alone in the apartment overnight with my husband on the loose.
So I whipped up this ridiculously easy apricot tart, as an overt distraction for my sweet-toothed husband, and it totally worked. (obviously!)
He absolutely LOVED it (and he probably completely forgot about the macarons hiding on top of the fridge).
This little dessert is a delicious combination of sweet almond pastry and tart fresh apricots, and the results are simply blissful!

Apricot Almond Tart
1/2 cup raw whole almonds3/4 cup sugar
1/4 tsp salt
3/8 tsp almond extract
3/4 cup all-purpose flour
3/8 tsp baking powder
1 large egg
3 Tbs butter
5 fresh apricots (cut in half - pits removed)
For the apricot glaze: mix 2-3 spoonfuls of apricot jam with a little water until you get a thin but not runny consistency.
Preheat oven to 375 degrees. Generously butter a tarte pan.
In a food processor, combine almonds, sugar, salt & almond extract and process until all the nuts are ground. Add the flour and baking powder and pulse to mix.
Add in the butter & egg and pulse until well-combined.
Press dough into bottom of tart pan (but not up the sides). Arrange the apricot halves cut-side-down in the dish (leaving a one centimetre edge), and press into dough slightly.
Bake for 40-45 minutes.
Allow to cool. Then brush top with apricot glaze.
Enjoy!
