I know this may sound silly, but I've really wanted a bundt pan for a while now.
It's just one of those things every household should have.
Well i finally got one.
And guess what I made? A bundt cake.
But not a normal one, of course.... I took a classic recipe for an almond cake and added some lime & coconut, and the results were magnificent!
Read on for the recipe...
Lime & Coconut Almond Cake
1 cup sugar
1 1/3 cups blanched slivered almonds
4 eggs
250 grams butter, softened
250 grams butter, softened
1 cup flour
2 teaspoons baking powder
rind from 1 lime + 1 Tbs lime juice
1 cup shredded coconut
icing sugar for dusting
Preheat oven to 350 degrees.
In a food processor, grind almonds and sugar. Add butter and process until creamy, then add in eggs, flour, baking powder, lime juice & rind and process until you have a smooth batter. Finally, mix in the coconut.
Spoon batter into a greased bundt pan and bake for approximately 40 minutes (or until an inserted toothpick/cake tester comes out clean).
Allow to cool completely in pan, then invert onto serving dish. Dust with icing sugar.

Oh boy this looks yummy. My fiance's granny is 90 years old she gave us her bundt pan...I should really put it to use! You're inspiring me. Lime and coconut is just splendid!

I love bundt cakes! My Nana always makes them and there is something so delicious and nostalgic about them. I love the crispy edges - every piece is a corner piece!
