Baby's got a new bundt pan! (and a new recipe too: Lime & Coconut Cake)


I know this may sound silly, but I've really wanted a bundt pan for a while now. 
It's just one of those things every household should have.

Well i finally got one.
And guess what I made? A bundt cake.
But not a normal one, of course.... I took a classic recipe for an almond cake and added some lime & coconut, and the results were magnificent!

Lime & Coconut Almond Cake
1 cup sugar
1 1/3 cups blanched slivered almonds
4 eggs
250 grams butter, softened
1 cup flour
2 teaspoons baking powder
rind from 1 lime + 1 Tbs lime juice
1 cup shredded coconut
icing sugar for dusting

Preheat oven to 350 degrees.
In a food processor, grind almonds and sugar. Add butter and process until creamy, then add in eggs, flour, baking powder, lime juice & rind and process until you have a smooth batter. Finally, mix in the coconut. 
Spoon batter into a greased bundt pan and bake for approximately 40 minutes (or until an inserted toothpick/cake tester comes out clean).
Allow to cool completely in pan, then invert onto serving dish. Dust with icing sugar. 
Enjoy!!

  7. I love bundt cakes! My Nana always makes them and there is something so delicious and nostalgic about them. I love the crispy edges - every piece is a corner piece!

  12. oh yum yum yum! i so agree with you on every household needing a bundt cake pan. i would add a springform pan to that! i still don't have either (and never have), so i can't wait to get those! plus your recipe and finished product look divine! good on ya :) happy weekend!

    oups! Just corrected the recipe... it's 250grams butter, softened.
