Homestyle Split Pea Soup (for my poor sweet husband who is sick with the flu)


It's been all kleenex boxes and chamomile tea around here these days. 
My poor husband has the flu.



So I made him a nourishing homestyle split pea soup for dinner tonight, and he ate two huge bowls of it.... not too shabby for someone who's supposedly lost his appetite.

I love this recipe. It's probably the first soup I ever made, and I keep going back to it. It's perfect for a night like tonight : )

Hearty Homestyle Split Pea Soup

5 1/2 cups vegetable or chicken soup stock
1 1/2 cups split peas, rinsed
1/2 cup green pepper, diced
1/2 cup carrots, sliced
1/4 cup onion, minced
2 tsp dried dill
dash of cayenne pepper
freshly ground black pepper to taste

  • In a large pot bring the soup stock and peas to a boil. Then reduce the heat to low and simmer for 45 minutes.
  • Add the remaining ingredients and cook on low for another 15-20 minutes (until the carrots & peas are cooked).
  • Add more water if you prefer a thinner soup.... I like it thick & hearty!
