It's been all kleenex boxes and chamomile tea around here these days.
My poor husband has the flu.
So I made him a nourishing homestyle split pea soup for dinner tonight, and he ate two huge bowls of it.... not too shabby for someone who's supposedly lost his appetite.
I love this recipe. It's probably the first soup I ever made, and I keep going back to it. It's perfect for a night like tonight : )

Hearty Homestyle Split Pea Soup
5 1/2 cups vegetable or chicken soup stock
1 1/2 cups split peas, rinsed
1/2 cup green pepper, diced
1/2 cup carrots, sliced
1/4 cup onion, minced
2 tsp dried dill
dash of cayenne pepper
freshly ground black pepper to taste
- In a large pot bring the soup stock and peas to a boil. Then reduce the heat to low and simmer for 45 minutes.
- Add the remaining ingredients and cook on low for another 15-20 minutes (until the carrots & peas are cooked).
- Add more water if you prefer a thinner soup.... I like it thick & hearty!
