This rich, dark chocolate cake is so moist and delicious, it will leave your guests absolutely astounded when they discover that it doesn't contain any flour.

Chocolate Cloud Cake (Oh and it's also flourless!)
3 1/2 oz semi-sweet chocolate
1 1/4 sticks unsalted butter, softened
1/8 cup espresso coffee
3 eggs, separated
1/2 cup sugar
2 Tbs + 1 tsp cornstarch
1/4 tsp baking powder
1/2 cup ground almonds
confectioners' sugar for dusting
10 inch cake pan
parchment paper
1. Grease the cake pan, and line the bottom with parchment paper.
2. Preheat oven to 350 degrees
3. Melt the chocolate and butter in a double boiler. Remove from heat and add the coffee. Then let cool a while.
4. Put the egg yolks and half of the sugar (1/4 cup) in a bowl and beat until light & fluffy. Mix in the cornstarch and baking powder.
5. Then carefully mix in the chocolate-buttter mixture, and fold in the almond meal.
6. Place the egg whites in a bowl and beat until stiff peaks form (but not dry). Gradually beat in the remaining 1/4 sugar. Gently fold into the chocolate mixture, and poor into the greased & lined cake pan.
7. Bake at 350 for 30 minutes until solid and almost firm in the center. An inserted toothpick should still have some moisture clinging to it (you don't want to over-bake this cake!).
8. Invert onto a wire rack to cool. Finally dust with confectioners' sugar. Serve with whip cream or ice cream : )

I love flourless cakes; I feel like I can eat twice the amount, due to the lack of flour. But I am consoled by the fact that there is no flour thus making it "lighter"!
