I have this funny idea in the back of my head that making pies & pastry is difficult, and so I usually stick to the cake department. Which is kind of ironic because I'm so much more of a pie-person than a cake-person.
Well, I'm changing my ways.... Why? Because of my love of pie, because it's August and it's peach season, and because I'm living out in the country this month... that's why!
And guess what? It's actually not that difficult at all!
Read on for the recipe...
I found this amazing recipe here. It's adapted from an original Fine Cooking recipe.
It's so easy to make and the crust turned out perfectly!

I agree ~ pies scare the hell out of me (or rather the crusts!)...but this one might just sway my thinking. My goodness it looks good!
Ooo, I like that the pie is open-faced (so to speak)...so you can see all the pretty, yummy peaches inside. It looks absolutely delicious!
Looks divine! When can I come over??
oooh yummo, looks amazing. oh how i miss peaches right now, can't wait for summer!
i used to make pie from scratch but haven't in years. you've inspired my to put it on my list of things to do this fall. looks WONDERFUL, vanessa!

YUM. I must try this recipe ASAP. I have to bring dessert to a potluck on Friday and this just might to do the trick!
this looks AMAZING!
Wow -- gorgeous! I can just taste it, with the melty vanilla ice cream - yum! No better time to make a peach tart, either -- the peaches at the greenmarket have been absolutely amazing.
That looks so beautiful and gourmet! Can I say that peaches are one of the best fruit? But only if properly ripe and not too ripened. I feel like peach "season" is just around the corner...though, everything feels late in Seattle this year.
I have that same idea in my head! I never make pies. But this looks SO yummy...
yummmmm!
xx
that's so funny because I am scared to make cakes! they seem like such a mystery to me - pies are pretty "no fail". as long as you have yummy fruit and loads of butter, pretty much anything would taste delicious ;)
