Crunchy cookie bottom+ Fresh fruit + yogurt cream = SCRUNCH!
This dessert is soooooo good! The creamy topping is equal parts whipping cream and yogurt... so it's not even that bad for you : )

Cookie Crunch Bottom
1/4 cup butter or margarine
1/3 cup brown sugar
2/3 cup rolled oats
1/3 cup whole wheat flour
Preheat oven to 400 degrees. Place flour & oats in a bowl and cut in the butter until the mixture is the texture of breadcrumbs. Then mix in the brown sugar. Press into a greased baking tray (to approximately 0.5 to 1 cm thick). Bake for 15-20 minutes, until lightly golden.
Allow to cool, then break into various sized pieces. Try not to just eat the entire cookie as is at this point, like I started to do!
Yogurt Cream
250 ml whipping cream
1 cup plain yogurt
2-3 tablespoons honey (depending on how sweet you like it)
Beat whipping cream until stiff peaks form. Then mix in the yogurt and honey.
Fresh fruit: berries, banana, tropical fruit... anything can go into scrunch.
The assembly:
Place pieces of the cookie bottom into a bowl or serving dish. Cover with fresh fruit (reserve a few for garnish). Then cover with the cream. Garnish with more fresh fruit, nuts, coconut, chocolate or whatever your heart desires!
Best eaten within a few hours making. Enjoy!
