Orange & Almond Polenta Cake


Ok, you have to make this cake! It's so light and delicious, and oh-so quick & easy to whip up! It's the perfect tea-time or coffee break cake. Seriously, I can't stop eating it. You gotta try it : )

Orange & Almond Polenta Cake

(from the Moosewood Restaurant - Simple Suppers Book)


1/3 Cup cornmeal
2/3 Cup unbleached white flour
2 tsp baking powder
1/2 tsp salt
1 1/2 cups almonds
3/4 cup sugar
1 orange
1/2 cup vegetable oil
2 eggs
confectioners' sugar for dusting

Preheat oven to 350 degrees. Lightly oil & flour a 9-inch cake pan.
-mix cornmeal, flour, baking powder and salt in a bowl.
-in a food processor or blender, grind almonds and sugar until finely ground. Then add to the flour mixture.
-Take the orange and grate off approximately 1 tablespoon of rind/peel. Then squeeze 1/3 cup of juice (regular orange juice works too).
-In the blender, mix eggs, orange zest, oil and 1/4 cup water. Blend for approximately 15 seconds.
-Add the dry ingredients into the blender/food processor and mix well.
-poor the batter into the prepared cake pan and bake for 45 minutes, or until an inserted toothpick comes out clean.
-allow to cool for 10 minutes then remove from cake pan. Once the cake is completely cooled, dust with icing sugar and ENJOY!!!

This looks delicious - and I love the photo series! I've been really into citrus cakes lately, will have to try this next. The cornmeal in there must give a nice texture too.
