I came up with this delightful concoction the other night when I was trying to use up the leftover food in our fridge before leaving on vacation.

They achieve that oh-so-perfect combination of spicy, salty, and sweet that I love so much.
And they're very easy to make too.

All you need to do is cut some jalapeño peppers in half lengthwise, remove the insides, and stuff them with a wedge of halloumi cheese. Bake these on an oiled baking sheet (I lined mine with aluminium foil) at 425 degrees until the peppers are soft and the cheese is golden brown on top (about 30mins).
Drizzle generously with honey before serving.
I can see these working as either an appetizer or a side-dish.
