Rocket, Orange and Fennel salad

This salad was a random creation last night, and it turned out pretty good. A light and refreshing ending to a beautiful Montreal spring day.


So there's not much of a recipe here.... just throw all the ingredients together and add the dressing.
I used enough Rocket (Arugula) for 2 salads, 1 large orange peeled and sliced, 1/2 a fennel bulb sliced razor thin, a sprinkling of thinly sliced onion.
Garnish with crumbled good quality parmesan cheese.

dressing:
2 tbs olive oil
1 tbs balsamic vinegar
1 garlic clove, crushed
1 tsp grainy mustard
1 tsp maple syrup or honey
salt & pepper

Mmmm, looks yummy. Now how come I never cook with fennel...?
